Vanilla, Walnut & Orange Yogurt

Friday, November 13, 2015

For a recent brunch I hosted in my new house I made this delicious (and I mean delicious) Orange Vanilla Yogurt. It is a recipe adapted from Ina Gartens recipe which can be found here. I served this with fruit and granola and it went down a treat. It was like having dessert for breakfast!

Ingredients:
2 Tubs Plain Low Fat Yogurt
1/2 Cup Chopped Walnuts
1 Tbsp Vanilla Extract
1/2 Cup Honey
2 Oranges, Zested
Orange Juice

Method:
1. Line a sieve with kitchen paper/paper towels/cheesecloth and put the sieve over a bowl - leaving space between the end of the sieve and the end of the bowl.
2. Add the yogurt and put a sheet of the kitchen paper over the top. Leave in the fridge overnight or 3 hours.
3. After the allowed time, you will see that clear liquid has drained from the yogurt and is at the end of the bowl.
4. Place the remaining yogurt that's in your sieve into a separate bowl and add your walnuts, vanilla, honey and orange zest.
5. Stir the mixture until everything is incorporated. Your yogurt will not be as wet as normal as all the liquid has drained out.
6. Add in your orange juice bit by bit, giving it a stir each time. This is where you can make the consistency you like and to your taste. I used about 1 cup of juice.
