Cookie Monster Cupcakes

Recently we had a Bake Sale in work and I made my Cookie Monster Cupcakes. They are quite tedious and messy to make so I only made 8 but they flew out the door in the first 5 minutes so in hindsight I should have made a larger quantity.

Method:
Prepare the fur: Add desiccated coconut into a sealable bag and add a drop or two of light blue food colouring (mine was a darker blue by accident). Shake the bag until all the coconut is coloured. Add some more colouring if required.

Prepare the eyes: Melt milk chocolate in a microwaveable bowl. Drop a tiny dot of chocolate (you can also use black fondant) in the centre of the white chocolate disc (I used white buttons) and leave set.

  1. Ice your cupcake - I use this buttercream icing recipe (with a few drops of blue colouring).
  2. Roll the top of the cupcake in the coloured desiccated coconut. 
  3. Add two eyes.
  4. Make a slit a bit below the eyes from left to right, using a sharp knife.
  5. Cut a cookie (I use maryland) in half and place it into the opening in the cupcake that you made with the knife. Use the knife to keep it open while you put the cookie inside.

Top Tip - allow your cupcake to rise high so you get a bit more height for the cookie monster. If the cupcake is flat you would have to use a lot of icing to get the desired height.
