Spanish Fries

Spanish Fries are something I usually see in our local bar and tried to recreate a version of them at home. They are so simple to make and great for a dish to put out when you have people over or you feel like pigging out a little bit .

The quantities of ingredients on the list depends on how much you want to make. Or how spicy you want them etc. You can make them to your preferred taste! I'll mark the quantities of what I used. 

You will need:
1. Chips (frozen or homemade, oven or fried) - (500-600g frozen).
2. Jalapeños (chopped) - one jalapeño. 
3. Olives (pitted and chopped) - 5 olives
4. Grated cheddar cheese & mozzarella - 100g
5. Cumin - 1 tsp
6. Fresh corriander - 1 tsp
7. Chilli powder - 2 tsp
8. Sour cream (one tub).

Start by cooking your chips (oven for less calories and fat, deep fry for a crispier finish) and putting these into a dish that's suitable for the oven. 
Shake a small amount of Chili Powder and and even smaller amount of Cumin onto the chips and shake, allowing all of the chips to get an even seasoning. Sprinkle the grated cheese (mix of cheddar and mozzarella) on top, while also adding jalapeños and chopped olives. 

Put the dish back in the oven allowing the cheese to melt. Then remove and add some fresh chopped coriander and serve with a side of sour cream! Enjoy!
