Updated Coffee Cake

I ended up making this cake by multiplying the ingredients of the original coffee cake by 1.5 so the measurements are a little bit funny, but it made for a really delicious cake. What was also handy was I used gluten free flour and it turned out delicious. 
This recipe makes 3 sponges using 6" tins - this allows for a higher cake which looks more impressive when decorated.

American Style Pancakes

I made a last minute decision to make some American Style Pancakes for a brunch we were hosting. I couldn't find a recipe in my cookbooks - it seems the only Barefoot Contessa cookbook that I don't own is the one with a recipe for this. I ended up turning to good old google and scrolled to find Jamie Oliver's recipe as I find that his or BBC Good Food's recipes rarely let you down. A quick look at the recipe for the ingredients, it looked simple enough so off I went to make it.

Hazelnut Thins

The easiest things I have ever made. They are ridiculously light and thin and smell of delicious hazelnuts and went perfectly with the affogato we gave as a dessert at our dinner party. You only want something small after a hefty meal and this was perfect to go with our ice-cream and espresso.

Easy Peasy Granola

I was entertaining friends and family for brunch and was making the most delicious yogurt ever, and needed a crunch element to go with it. Granola for brunch was an obvious choice so I went about making my own. As I made my way through the supermarket with my list of multiple ingredients for the granola, I realised how expensive this was going to be - so I cheated!
