Easy Guacamole - Updated

Guacamole is an easy recipe to make and goes with so many meals (fajitas, nachos, fresh salads etc.), or it can also be great for just a snack to have with some tortilla chips. The extra bonus is that it's healthy! Forget those people telling you that Avocados are full of fat (they are but it's good fat- the health professionals will tell you that) and start making some homemade guacamole!

I got this recipe from Food Network here but adapted it to make a smaller portion. The measurements are a bit silly when making one portion, but if you're making it for a group then definitely make the original recipe size. It will not go to waste - its fabulous!

Ingredients:
One ready to eat avocado, halved, seeded and peeled.
1/3 lime, juiced.
1/6 teaspoon salt.
1/6 teaspoon ground cumin.
1/6 teaspoon cayenne pepper.
1/6 red onion, sliced and diced thinly.
1/3 jalapeno pepper, seeded and chopped finely.
2/3 Tomato, seeded and diced.
1/2 tablespoon coriander/cilantro
1/3 clove garlic, peeled & minced

Method:
Easy Option: 
1. Put the avocado and lime juice in a bowl, ensuring the avocado is covered. Then drain lime juice & retain in small bowl. 
2. Mash avocado. Add salt, cumin, cayenne and mash again.
3. Stir in the onion, pepper, tomato, coriander/cilantro and garlic.
4. Add retained lime juice and stir again.
5. Let sit for at least one hour, or overnight.
6. Serve with dinner or some tortilla chips.

Easier Option: 
Blend it altogether in a food processor and you're done! Simple. 

It really is pertinent that your avocado is ripe and ready to eat. You can ensure this by squeezing the avocado and if it feels a bit malleable then you should be good! Ensure to taste a small bit of your guacamole to see if your seasoning is right.
