Ingredients:
7 Large Potatoes, cleaned
200g Grated Cheddar & Mozzarella Cheese
150g chopped bacon or chorizo
Bunch of Spring Onions, chopped
Sour Cream
Method:
1. Scrub the potatoes clean and dry them off.
2. Place them on the racks in the oven and cook them at 180degrees (fan oven) for 40 minutes to an hour, or until cooked.
3. Once done, take out of the oven and leave them cool a bit.
4. Cut in half (length ways) and scoop out the potato, leaving about a 1/4 of the potato left in there.
5. Cut the halves into half and line onto a baking tray.
6. Sprinkle the cheese, chopped spring onions, and the cooked bacon pieces over the potatoes.
7. Cook in the oven for 10 or 20 minutes , or until the cheese is melted and the potatoes are crisp.
